Description

This African Chicken Curry is a bold and creamy dish made with coconut milk, peanut butter, tomatoes, and warm spices. It’s hearty, comforting, and packed with African-inspired flavors.


Ingredients

1.5 lbs chicken thighs or breasts, cut into chunks

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

2 tablespoons curry powder

0.5 teaspoon paprika

0.5 teaspoon ground cinnamon

0.5 cup peanut butter

14 oz diced tomatoes

14 oz coconut milk

1 tablespoon tomato paste

2 tablespoons vegetable oil

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Cooked rice or flatbread, for serving


Instructions

1. Heat the vegetable oil in a large skillet over medium-high heat. Add chicken and brown on all sides. Remove and set aside.

2. Add chopped onion to the same skillet and cook until softened. Stir in garlic and ginger and cook 2 more minutes.

3. Sprinkle in curry powder, paprika, and cinnamon. Cook for 30 seconds to toast the spices.

4. Stir in tomato paste, diced tomatoes, and coconut milk. Mix well and return chicken to the pot.

5. Add peanut butter and stir until fully combined. Let simmer for 20–25 minutes, until chicken is cooked and sauce thickens.

6. Season with salt and pepper. Garnish with cilantro or parsley. Serve hot with rice or flatbread.

Notes

Use creamy peanut butter for a smoother texture or chunky for added bite.

Add vegetables like spinach or bell peppers for extra color and nutrients.

For a spicier version, include chili flakes or fresh chili.
