Description
A warm, rich, and creamy West African-inspired soup made with peanut butter, sweet potatoes, tomatoes, and spices. This one-pot dish is both hearty and healthy—vegan, gluten-free, and bursting with comforting flavors.
Ingredients
1 tablespoon vegetable oil
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
1 medium sweet potato, peeled and diced
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
3/4 cup natural peanut butter
1 1/2 cups chopped kale or collard greens
Salt and pepper to taste
Chopped roasted peanuts, for garnish
Chopped fresh cilantro, for garnish
Cooked rice, for serving (optional)
Instructions
1. Heat oil in a large pot over medium heat. Add chopped onion and cook until soft, about 5 minutes.
2. Add garlic and ginger, cooking for another minute until fragrant.
3. Stir in cumin, smoked paprika, and cayenne. Add diced sweet potato and stir to coat.
4. Pour in diced tomatoes (with juices) and vegetable broth. Simmer uncovered for 15–20 minutes until sweet potatoes are tender.
5. In a bowl, mix peanut butter with a bit of hot broth to thin, then stir into soup to prevent clumps.
6. Add chopped greens and simmer for another 5–10 minutes until tender.
7. Season with salt and pepper. Serve hot with rice and garnish with peanuts and cilantro.
Notes
For the creamiest texture, use natural, unsweetened peanut butter.
Feel free to swap kale with spinach or collard greens.
