Description
A cozy fall-inspired side dish made with roasted butternut squash, tart apples, and a buttery pecan topping. Sweetened with maple syrup and warm spices, this casserole is perfect for holiday gatherings or chilly evenings.
Ingredients
4 cups butternut squash, peeled and cubed
2 large apples, peeled and sliced
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons maple syrup
1/3 cup pecans, roughly chopped
2 tablespoons brown sugar
1 tablespoon butter, melted
Instructions
1. Preheat oven to 375°F (190°C).
2. In a mixing bowl, toss the squash and apple slices with olive oil, salt, cinnamon, nutmeg, and maple syrup.
3. Transfer mixture to a greased 9×13-inch baking dish and spread evenly.
4. In a separate bowl, mix chopped pecans, brown sugar, and melted butter. Sprinkle over the casserole.
5. Bake uncovered for 35–40 minutes until squash is tender and topping is golden.
6. Let cool slightly before serving.
Notes
Use Honeycrisp or Granny Smith apples for a firm texture.
You can prep the casserole a day ahead and bake fresh.
Freeze leftovers for up to 2 months and reheat before serving.
