Ingredients
2 medium apples, peeled and thinly sliced
1 tablespoon butter
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg (optional)
4 flour tortillas (8-inch size)
1 cup shredded mozzarella or Monterey Jack cheese
Additional butter or cooking spray for the skillet
Maple syrup or powdered sugar for serving (optional)
Instructions
1. Melt butter in a skillet over medium heat. Add sliced apples, brown sugar, cinnamon, and nutmeg. Cook for 5–7 minutes until apples are soft and caramelized.
2. Lay out tortillas and sprinkle cheese on half of each. Spoon the warm apple mixture over the cheese, then fold tortillas in half to create a half-moon shape.
3. Wipe the skillet clean and melt a bit more butter or spray with oil. Cook each quesadilla for 2–3 minutes per side, until golden and crispy. Slice into wedges and serve warm.
Notes
Peeling the apples gives a softer texture, but you can leave the skin on for a little bite.
Try cream cheese or brie for a richer cheese variation.
