Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
3 medium apples, peeled and thinly sliced
1/2 tsp ground cinnamon
2 tbsp brown sugar
1/2 cup rolled oats
1/3 cup all-purpose flour
1/3 cup brown sugar (for crumble)
1/4 cup unsalted butter, cold and cubed
Instructions
1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter. Press into springform pan and bake for 8 minutes. Let cool.
2. Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla. Pour over crust.
3. Toss sliced apples with cinnamon and brown sugar. Spread over cheesecake filling.
4. Combine oats, flour, brown sugar, and cubed butter until crumbly. Sprinkle over apples.
5. Bake 55–65 minutes until center is just set. Cool at room temp, then refrigerate 4 hours or overnight.
Notes
Use Granny Smith apples for tartness that balances the sweet layers.
Let the cheesecake chill overnight for the best texture and flavor.
