Ingredients
1 lb sirloin steak, thinly sliced
1 tbsp olive oil
2 tbsp butter
1 medium onion, finely chopped
2 cloves garlic, minced
8 oz cremini or white mushrooms, sliced
1 tbsp flour
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1/2 cup sour cream
Salt and black pepper to taste
Fresh parsley, chopped
Cooked egg noodles or rice, for serving
Instructions
1. Heat olive oil in a skillet over medium-high heat. Sear the sliced beef in batches until browned but not fully cooked. Set aside.
2. In the same skillet, melt butter. Add onion and cook until translucent. Stir in garlic and cook for another minute.
3. Add mushrooms and cook until browned and tender, about 6 minutes.
4. Sprinkle flour over the mixture. Stir, then slowly pour in beef broth, stirring constantly to avoid lumps.
5. Add Worcestershire sauce and Dijon mustard. Simmer for 5 minutes until slightly thickened.
6. Reduce heat and stir in sour cream until the sauce is smooth. Return beef and juices to the pan.
7. Simmer for 2–3 minutes until beef is just cooked through. Season with salt and pepper.
8. Serve over noodles or rice. Garnish with parsley if desired.
Notes
Use full-fat sour cream for the richest flavor and best texture.
Slice beef thinly against the grain for maximum tenderness.
