Description

A refreshing and vibrant mix of ripe tomatoes, crisp cucumber, red onion, green pepper, briny olives, and creamy feta cheese, dressed simply with olive oil, red wine vinegar, and oregano. This authentic Mediterranean Greek Salad is the perfect side or light meal, packed with fresh flavor and nutrients.


Ingredients

4 ripe tomatoes

1 large cucumber

½ red onion

1 green bell pepper

½ cup Kalamata olives

200g feta cheese

2 tablespoons extra virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Sea salt and freshly cracked black pepper to taste


Instructions

1. Wash and dry all the vegetables thoroughly.

2. Chop the tomatoes into wedges. Peel the cucumber and slice it into thick half-moons. Thinly slice the red onion and green bell pepper into rings.

3. In a wide bowl or platter, layer the tomatoes, cucumbers, onions, and peppers.

4. Scatter the Kalamata olives across the top.

5. Add the block of feta cheese whole or crumbled in rustic chunks.

6. Drizzle olive oil and red wine vinegar evenly over the salad.

7. Sprinkle oregano, sea salt, and cracked black pepper to season.

8. Let the salad rest for a few minutes before serving to allow flavors to meld.
