Description

This BBQ Cheddar Meatloaf brings bold flavor and melty cheddar to your dinner table. Moist, juicy, and topped with a tangy BBQ glaze, it’s the perfect comfort food with a cheesy twist.


Ingredients

1 1/2 lbs ground beef (80/20)

1 cup shredded sharp cheddar cheese

1/2 cup plain breadcrumbs

1/3 cup milk

1/2 cup finely chopped onion

2 garlic cloves, minced

2 large eggs

1 tbsp Worcestershire sauce

1/2 tsp salt

1/2 tsp black pepper

3/4 cup BBQ sauce (plus extra for topping)


Instructions

1. In a large bowl, stir together the breadcrumbs and milk, letting it sit for 2–3 minutes until the mixture softens. Add the chopped onion, garlic, eggs, Worcestershire, salt, pepper, and BBQ sauce. Stir until combined.

2. Add the ground beef and shredded cheddar to the mixture. Use your hands or a spatula to gently fold until just combined. Don’t overmix—this keeps the meatloaf tender.

3. Transfer the meat mixture onto a parchment-lined baking sheet or a loaf pan. Shape into a loaf and spread a generous layer of BBQ sauce on top.

4. Bake in a preheated 375°F oven for 45–55 minutes, or until the internal temperature reaches 160°F. Let it rest for 10 minutes before slicing.

Notes

Use sharp cheddar for a richer flavor and better melt.

Don’t overmix the meat to keep the texture tender.

Let the meatloaf rest before slicing so it holds together well.
