Description

A fresh, vibrant salad combining baby spinach, mixed berries, feta cheese, and candied pecans, topped with a tangy balsamic vinaigrette. Perfect for brunch, potlucks, or a refreshing summer side.


Ingredients

6 cups baby spinach

1 cup sliced strawberries

1/2 cup blueberries

1/2 cup raspberries

1/4 cup thinly sliced red onion

1/4 cup crumbled feta cheese

1/4 cup chopped candied pecans

1/4 cup balsamic vinaigrette dressing


Instructions

1. Wash and dry the baby spinach and all berries.

2. Slice the strawberries and red onion thinly.

3. Roughly chop the pecans if they are whole.

4. In a large salad bowl, place the baby spinach as the base.

5. Scatter the berries and red onion evenly over the spinach.

6. Add crumbled feta cheese and chopped pecans.

7. Drizzle with balsamic vinaigrette dressing.

8. Toss gently to combine and serve immediately.

Notes

Use fresh, not frozen berries for best texture.

Add grilled chicken or shrimp for protein.

Keep dressing separate if preparing ahead of time.
