Ingredients
1 pound lean ground beef
1 small yellow onion, diced
15 ounces black beans, drained and rinsed
15 ounces kidney beans, drained and rinsed
15 ounces corn, drained
10 ounces diced tomatoes with green chilies (Rotel)
15 ounces diced tomatoes
2 cups beef broth
1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
1 teaspoon cumin
1/2 teaspoon smoked paprika
Salt and pepper, to taste
Instructions
1. In a skillet over medium heat, cook the ground beef and diced onion until browned and fully cooked. Drain excess grease.
2. Transfer the beef mixture to a Crockpot.
3. Add the black beans, kidney beans, corn, Rotel, diced tomatoes, beef broth, taco seasoning, cumin, smoked paprika, salt, and pepper.
4. Stir everything together to combine.
5. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours.
6. Serve hot with desired toppings like shredded cheese, sour cream, tortilla chips, or sliced jalapeños.
Notes
