These buttery Heart-Shaped Strawberry Shortbread Cookies are crisp, tender, and filled with sweet strawberry jam. Perfect for gifting, holidays, or when you’re craving a charming dessert.
Ingredients
1 cup unsalted butter, softened
2⁄3 cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1⁄4 teaspoon salt
1⁄2 cup strawberry jam or preserves
Powdered sugar, for dusting
Instructions
1. In a large bowl, cream together softened butter and powdered sugar until light and fluffy. Mix in vanilla extract.
2. Gradually add in flour and salt, mixing just until a soft dough forms.
3. Divide dough into two discs, wrap in plastic, and refrigerate for 30 minutes.
4. Roll dough to 1⁄4 inch thickness. Use a heart-shaped cookie cutter to cut shapes. For half of the cookies, cut a smaller heart in the center.
5. Place cookies on a lined baking sheet and chill again for 10 minutes.
6. Bake at 350°F (175°C) for 10–12 minutes or until edges are lightly golden.
7. Let cool completely. Spread strawberry jam on full heart cookies. Top with cut-out hearts.
8. Dust assembled cookies with powdered sugar before serving.

Chilling the dough twice helps preserve the heart shape during baking.
