Ingredients
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Extra granulated sugar for rolling (optional)
Instructions
1. In a large bowl, beat together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
2. Add the egg and vanilla extract; mix until well combined.
3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture; mix just until combined.
4. Chill dough for at least 30 minutes.
5. Preheat oven to 350°F (175°C). Scoop 1 tablespoon of dough, roll into balls, and optionally roll in sugar.
6. Place on a lined baking sheet and press with a fork in a crisscross pattern.
7. Bake 10–12 minutes until edges are golden. Cool on the sheet for 5 minutes before transferring to a rack.
Notes
Chill the dough for at least 30 minutes for better structure and flavor.
Don’t overbake—cookies firm up as they cool.
For extra chewiness, use more brown sugar than white.
