Ingredients
4 cups mashed sweet potatoes
1 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs, beaten
1/2 cup unsalted butter, melted
1 cup brown sugar, packed
1/3 cup all-purpose flour
1 cup chopped pecans
1/3 cup unsalted butter, softened
Instructions
1. Preheat oven to 350°F (175°C). Pierce and bake sweet potatoes for 45-50 minutes or until soft. Peel and mash when cool.
2. In a large bowl, mix mashed sweet potatoes, sugar, salt, vanilla, eggs, and melted butter. Blend until smooth.
3. Pour into a greased 9×13-inch baking dish and smooth the top.
4. For the topping, combine brown sugar, flour, pecans, and softened butter until crumbly. Sprinkle over the sweet potato mixture.
