Ingredients
1 medium head cauliflower cut into bite sized florets
1/2 cup all purpose flour
1/2 cup water
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil optional
1/2 cup buffalo sauce
1/2 cup ranch or blue cheese dressing optional for serving
Instructions
1. Preheat oven to 425°F and line a baking sheet with parchment paper.
2. In a large bowl whisk together flour, water, garlic powder, smoked paprika, salt, and black pepper until smooth.
3. Add cauliflower florets and toss until evenly coated in batter.
4. Arrange cauliflower in a single layer on the prepared baking sheet.
5. Bake for 20 minutes flipping halfway through.
6. Remove from oven and toss baked cauliflower with buffalo sauce until fully coated.
7. Return to baking sheet and bake an additional 10 to 15 minutes until crispy and caramelized.
8. Serve immediately with ranch or blue cheese dressing.
Notes
For extra crispiness, lightly spray the florets with cooking spray before baking.
Do not overcrowd the pan or the cauliflower will steam instead of crisp.
For a milder version mix buffalo sauce with 1 to 2 tablespoons melted butter or honey.
