Description

A golden, buttery vanilla cobbler topping blankets warm, syrupy peaches in this nostalgic dessert. With crisp edges, a tender crumb, and a luscious filling, this sweet crust cobbler is a summer favorite—perfect with a scoop of vanilla ice cream.


Ingredients

6 cups sliced ripe peaches (fresh, canned, or frozen)

1/3 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

3/4 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup unsalted butter, melted

1 teaspoon vanilla bean paste or extract

1 large egg

Optional: coarse sugar for topping


Instructions

1. Toss sliced peaches with 1/3 cup sugar, lemon juice, and vanilla extract in a bowl. Let them sit to release juices.

2. In another bowl, whisk together flour, 3/4 cup sugar, baking powder, and salt.

3. Combine melted butter, vanilla bean paste, and egg. Mix wet ingredients into dry until a thick batter forms.

4. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish and add peach mixture.

5. Drop spoonfuls of batter over peaches and gently spread. Some peaches showing is okay.

6. Sprinkle with coarse sugar if desired. Bake for 40–45 minutes until crust is golden and cooked through.

7. Let cool slightly and serve warm with ice cream or whipped cream.

Notes

Letting the peaches sit helps draw out natural juices for the syrupy filling.

Use vanilla bean paste for an extra-rich flavor and speckled appearance.

Make ahead and reheat in the oven at 300°F for 10–15 minutes to refresh the crust.
