Ingredients
2 chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter
3 garlic cloves, minced
1 cup heavy cream
1 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon dried thyme
Salt and pepper to taste
12 ounces pasta twists (fusilli or rotini)
Instructions
1. Cut chicken into bite-sized pieces and season generously with Cajun seasoning.
2. Heat olive oil in a skillet over medium-high and sear chicken until golden and cooked through. Remove and set aside.
3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1 cup of pasta water and drain.
4. In the same skillet, melt butter and sauté garlic until fragrant.
5. Add heavy cream to the skillet and stir in Parmesan, thyme, and parsley. Simmer until slightly thickened.
6. Toss in the cooked pasta, using reserved water as needed to loosen sauce.
7. Fold in the cooked chicken bites and heat through.
8. Garnish with extra Parmesan and parsley before serving.
