Ingredients
2 cups rotini pasta
2 boneless skinless chicken breasts
1 tablespoon Cajun seasoning
2 tablespoons butter
2 cloves garlic, minced
1 cup shredded mozzarella cheese
1 cup cubed Velveeta cheese
1 cup heavy cream
Salt and pepper, to taste
1 tablespoon olive oil
2 tablespoons chopped fresh parsley
Instructions
1. Boil salted water and cook rotini pasta until al dente. Drain and set aside.
2. Cut chicken into bite-sized pieces and season with Cajun seasoning.
3. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden and cooked through. Remove from skillet.
4. In the same skillet, melt butter. Sauté minced garlic for 1 minute.
5. Add heavy cream and simmer for 2-3 minutes until slightly thickened.
6. Add Velveeta cubes and shredded mozzarella. Stir until melted and smooth. Season with salt and pepper.
7. Return chicken to the skillet. Add cooked rotini and toss everything to coat well.
8. Garnish with chopped fresh parsley and serve hot.
