Ingredients

400g spaghetti

2 boneless skinless chicken breasts or thighs

1 tablespoon Cajun seasoning

3 garlic cloves, minced

2 tablespoons butter

1 cup heavy cream

1 cup shredded mozzarella cheese

1/3 cup grated Parmesan cheese

1/2 cup chicken broth

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Season the chicken with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden and fully cooked. Remove and let it rest before slicing.

3. Boil spaghetti in salted water until al dente. Drain and reserve 1 cup of pasta water.

4. In the same skillet, melt butter and sauté minced garlic over low heat until fragrant.

5. Pour in chicken broth and heavy cream; bring to a simmer.

6. Add mozzarella and Parmesan cheese. Stir until fully melted and sauce is smooth.

7. Toss cooked spaghetti into the sauce. Add reserved pasta water as needed for consistency.

8. Add sliced chicken and stir to coat well in the sauce.

9. Taste and adjust seasoning if needed.

10. Garnish with chopped parsley and serve hot.

Notes

Use low heat when melting cheese to prevent curdling.

You can swap spaghetti with linguine or fettuccine.

Add red pepper flakes if you want more heat.
