Ingredients
2 large chicken breasts
8 oz linguine
3 tablespoons butter
4 cloves garlic, minced
2 tablespoons Cajun seasoning (adjust to taste)
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1 tablespoon olive oil
Salt and black pepper to taste
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden and cooked through. Remove and let rest.
3. In a pot, boil salted water and cook linguine until al dente. Reserve 1 cup of pasta water before draining.
4. In the same skillet, melt butter and sauté garlic until fragrant.
5. Pour in heavy cream and bring to a simmer. Stir in Parmesan until melted into a smooth sauce. Add pasta water to adjust consistency.
6. Slice the rested chicken and return to skillet. Add cooked linguine and toss to coat.
7. Garnish with fresh parsley and extra Parmesan before serving.
