Ingredients
1 steak (ribeye, sirloin, or New York strip)
1 tablespoon olive oil
1 tablespoon Cajun seasoning
2 tablespoons butter
3 garlic cloves, minced
8 oz linguine pasta
1 cup heavy cream
1 cup grated Parmesan cheese
to taste salt and black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Bring steak to room temperature, pat dry, and rub both sides with Cajun seasoning.
2. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes per side until crust forms and desired doneness is reached. Rest steak after cooking.
3. In the same skillet, lower heat and add butter and minced garlic. Sauté for one minute.
4. Cook linguine in salted boiling water according to package instructions. Reserve 1/4 cup pasta water and drain.
5. In a separate saucepan, heat heavy cream. Gradually stir in Parmesan, whisking until smooth. Season with salt and pepper. Add pasta water if needed.
6. Toss linguine in the sauce until evenly coated. Slice rested steak and place on top.
7. Drizzle garlic butter over steak and garnish with parsley if desired. Serve immediately.
Notes
Resting the steak after cooking keeps it juicy.
Add red pepper flakes for extra spice.
Use freshly grated Parmesan for the smoothest sauce.
