Description

Tender Cajun-spiced steak tips seared to perfection, served over rigatoni tossed in a creamy parmesan cheese sauce. A bold, comforting dinner that’s sure to impress.


Ingredients

1 lb sirloin steak, cut into bite-sized tips

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

12 oz rigatoni pasta

3 tablespoons butter

4 cloves garlic, minced

2 tablespoons all-purpose flour

1 1/2 cups whole milk

1 cup heavy cream

1 1/2 cups grated Parmesan cheese

1 teaspoon Italian seasoning

Chopped parsley (optional, for garnish)


Instructions

1. Pat steak tips dry and season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Sear steak tips in batches, 2–3 minutes per side. Remove and set aside.

3. Cook rigatoni in salted boiling water until al dente. Reserve 1/2 cup pasta water, drain the rest.

4. In the same skillet, melt butter. Add garlic and cook 30 seconds. Stir in flour and cook 1 minute.

5. Slowly whisk in milk and cream. Let it simmer until thickened.

6. Stir in Parmesan and Italian seasoning until melted and smooth.

7. Add rigatoni and splash of pasta water. Toss to coat.

8. Return steak tips to the skillet and stir to combine.

9. Garnish with parsley if desired and serve hot.

Notes

Use freshly grated Parmesan to avoid a grainy sauce.

Don’t overcrowd the pan when searing steak tips—work in batches.

Add pasta water gradually to adjust sauce thickness to your liking.
