Description

This Cajun White Chicken Chili recipe combines tender chicken, creamy white beans, and smoky Cajun seasoning in a rich and hearty dish. Perfect for dinner, this easy-to-make chili is packed with bold flavor and a hint of spice.


Ingredients

2 tablespoons olive oil

1 medium onion diced

3 cloves garlic minced

1 pound chicken breast cut into bite-sized pieces

2 teaspoons Cajun seasoning divided

1 teaspoon salt

½ teaspoon black pepper

3 cups chicken broth

2 cans white beans drained and rinsed

1 can green chilies

1 cup heavy cream


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cook until fragrant and soft.

2. Add chicken pieces, season with salt, pepper, and half the Cajun seasoning. Cook until chicken is no longer pink outside.

3. Pour in chicken broth, white beans, green chilies, and remaining Cajun seasoning. Simmer for 15 minutes to meld flavors.

4. Reduce heat to low and stir in heavy cream. Heat through until creamy and slightly thickened.

5. Taste, adjust seasoning if needed, and serve hot with optional garnishes.

Notes

Start with less Cajun seasoning and adjust to taste.

Don’t overcook chicken to keep it tender.

Add cream gently over low heat to prevent curdling.
