Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
4 ounces cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract (for the cheesecake filling)
1/2 cup thick caramel sauce (store-bought or homemade)
Instructions
1. Cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
2. In a separate bowl, whisk flour, baking soda, and salt. Gradually add the dry mixture to the wet until combined. Chill for 30 minutes.
3. In a small bowl, mix softened cream cheese, powdered sugar, and vanilla until smooth. Set aside in the fridge to firm up slightly.
4. Scoop a tablespoon of cookie dough and flatten it slightly. Add about 1/2 teaspoon of the cheesecake filling in the center. Top with another flattened tablespoon of dough and seal the edges, forming a ball.
5. Preheat oven to 350°F (175°C). Place cookies on a lined baking sheet and bake for 10-12 minutes or until edges are golden. Let cool on the pan for 5 minutes, then transfer to a wire rack. Once cooled, drizzle with caramel sauce.
Notes
Chill the dough before baking to prevent spreading.
Make sure to completely seal the dough around the filling.
Use a thick caramel sauce for best results.
