Ingredients
2 tablespoons unsalted butter
2 large sweet onions, thinly sliced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon fresh thyme leaves (or 1/4 tsp dried thyme)
1 teaspoon balsamic vinegar
4 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded Gruyere cheese
1/4 cup grated Parmesan cheese
Optional chopped chives or parsley for garnish
Instructions
1. Melt the butter in a large skillet over medium-low heat. Add the sliced onions, salt, pepper, and thyme. Cook slowly, stirring occasionally, for 30 to 40 minutes until deeply golden and caramelized. Stir in the balsamic vinegar during the last 5 minutes of cooking.
2. In a large bowl, mix together the cream cheese, sour cream, and mayonnaise until smooth and well combined.
3. Fold the caramelized onions into the creamy base. Stir in the Gruyere and Parmesan cheeses.
4. Transfer the mixture into a small baking dish. Bake at 375°F (190°C) for 20 to 25 minutes until hot and bubbly with golden edges.
5. Garnish with chopped chives or parsley if desired. Serve immediately with your favorite dippers.
Notes
For deeper flavor, let onions caramelize low and slow; don’t rush the process.
Gruyere brings a nutty richness, but Fontina or Swiss also work great.
