These Carrot Cake Cream Cheese Bars are a delicious blend of warm spices, tender grated carrots, and rich cream cheese filling. Perfect for spring gatherings or cozy treats, they offer just the right balance of sweet, tangy, and comforting.
Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups finely grated carrots
8 oz cream cheese softened
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment or grease lightly.
2. Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a separate bowl, mix granulated sugar, brown sugar, oil, eggs, and vanilla until smooth. Stir in grated carrots.
4. Combine dry ingredients with the wet mixture until fully blended.
5. In another bowl, beat cream cheese, sugar, egg, and vanilla until creamy.
6. Spread 2/3 of carrot batter into the pan. Add cream cheese layer and smooth it out. Dollop remaining carrot batter on top and swirl with a knife.
7. Bake 35–40 minutes or until center is set and edges are golden. Cool completely before slicing.
Notes
Grate carrots finely for best texture.
Chill bars before slicing for cleaner cuts.
Add chopped walnuts or raisins for extra bite.
