Ingredients

12 oz penne pasta

1 lb shrimp, peeled and deveined

2 tbsp butter

3 cloves garlic, minced

2 cups fresh spinach

1 1/2 cups heavy cream

1 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, grated

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1 tbsp olive oil


Instructions

  1. Cook the Pasta: Boil the penne pasta in salted water according to package instructions until al dente. Drain and set aside.
  2. Sauté the Shrimp: In a large skillet, heat butter and olive oil over medium heat. Add garlic and cook for 30 seconds. Add shrimp, season with paprika, salt, and pepper, and cook for 2-3 minutes per side. Remove and set aside.
  3. Cook the Spinach: In the same skillet, add spinach and cook until wilted, about 2 minutes. Set aside.
  4. Make the Cheese Sauce: Reduce heat to low, pour in heavy cream, and stir in Italian seasoning, red pepper flakes, and parmesan. Let simmer for 3-4 minutes. Add half of the mozzarella and stir until smooth.
  5. Combine Everything: Add the cooked pasta, shrimp, and spinach to the sauce. Toss to coat evenly.
  6. Bake for Perfection: Preheat oven to 375°F (190°C). Transfer mixture to a baking dish, sprinkle remaining mozzarella on top, and bake for 10-15 minutes until golden and bubbly.
