This Cheesy Beef and Potato Soup is the perfect cozy dish for any night of the week. Hearty ground beef, creamy potatoes, and sharp cheddar cheese come together in a soul-warming bowl that’s easy to make and always satisfying.
Ingredients
1 lb ground beef
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
3 cups peeled and diced potatoes
3 cups beef broth
1 cup milk
1/2 cup heavy cream
2 cups shredded cheddar cheese
1 tsp paprika
Salt and black pepper to taste
1/4 tsp red pepper flakes (optional)
Cooked bacon bits (optional)
Chopped green onions (optional)
Extra cheese for topping (optional)
Instructions
1. In a large pot, heat olive oil and brown the ground beef. Drain excess fat and set aside.
2. Add diced onion to the pot and cook until soft. Stir in minced garlic and cook for 30 seconds.
3. Add potatoes, beef broth, paprika, salt, and pepper. Bring to a boil, then simmer for 15–20 minutes.
4. Partially blend the soup using an immersion blender to thicken while keeping some chunks.
5. Add milk and heavy cream. Stir in shredded cheese gradually until fully melted.
6. Return beef to the pot, combine well, and heat through. Adjust seasoning as needed.
7. Serve hot, topped with optional bacon bits, green onions, or extra cheese.
Notes
Use Yukon Gold or russet potatoes for best texture.
For extra flavor, add a dash of Worcestershire sauce.
If reheating, add a splash of milk to maintain creaminess.
