Ingredients
9 oz cheese tortellini
1 lb ground beef
1 medium yellow onion, diced
3 garlic cloves, minced
2 cups enchilada sauce
1 packet taco seasoning
1 ½ cups shredded cheddar cheese
½ cup sour cream
1 tbsp olive oil
2 tbsp fresh cilantro, chopped (optional)
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
2. Add diced onion and minced garlic to the skillet. Cook for 3-4 minutes until onion is soft and garlic is fragrant.
3. Sprinkle taco seasoning over the beef mixture and stir well. Pour in the enchilada sauce and bring to a simmer.
4. Stir in the cheese tortellini. Cover and simmer for 7-8 minutes until tortellini is tender.
5. Lower the heat and stir in sour cream. Sprinkle cheddar cheese over the top, cover again, and let it melt for 2-3 minutes.
6. Garnish with chopped cilantro if desired and serve hot.
