Ingredients
1 lb ground beef
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and pepper, to taste
1 cup shredded cheddar cheese
4 large flour tortillas
1/2 cup sour cream
1 cup shredded lettuce
1 tomato, diced
Optional: sliced jalapeños, chipotle mayo, hot sauce
Instructions
1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic and cook for 2-3 minutes until fragrant and translucent.
2. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-8 minutes. Drain excess fat.
3. Stir in smoked paprika, cumin, salt, and pepper. Let it simmer for 1-2 minutes to meld the flavors.
4. Heat the tortillas on a dry skillet or microwave until just soft and pliable, about 20 seconds each.
5. Spread a tablespoon of sour cream onto each tortilla. Layer with seasoned beef, shredded cheese, lettuce, tomato, and any extras you like.
6. Fold in the sides, then roll tightly into a wrap. Slice in half and serve immediately, or wrap in foil for on-the-go meals.
Notes
Let the beef cool slightly before assembling to prevent soggy tortillas.
Warm tortillas make folding much easier and help prevent tearing.
