Ingredients
4 cups cauliflower rice (fresh or frozen)
0.5 cup shredded mozzarella cheese
0.25 cup grated Parmesan cheese
1 large egg
0.25 teaspoon garlic powder
0.25 teaspoon salt
0.25 teaspoon black pepper
1 cup shredded cheddar cheese
Butter or oil spray for grilling
Instructions
1. Preheat oven to 425°F (220°C). Microwave cauliflower rice for 5–7 minutes until soft. Cool slightly, then squeeze out all moisture using a kitchen towel.
2. In a bowl, mix cauliflower with mozzarella, Parmesan, egg, garlic powder, salt, and pepper. Form into 4 square patties on parchment-lined baking sheet.
3. Bake for 20–25 minutes or until golden and firm. Let cool for 5 minutes.
4. In a skillet, layer cheddar between two cauliflower slices. Lightly butter or spray outsides and grill over medium heat until golden brown and cheese is melted—about 3–4 minutes per side.
5. Serve hot, optionally with tomato soup or dipping sauce.
Notes
Use a clean towel to remove as much moisture as possible from the cauliflower—this is key for holding the slices together.
Try adding fresh herbs or a pinch of chili flakes to the cauliflower mixture for a flavor boost.
