Cheesy Chicken Enchiladas are the perfect comfort food, combining tender shredded chicken, rich enchilada sauce, and melty cheese all wrapped in soft tortillas. This crowd-pleasing dinner is easy to prep, customizable, and ideal for make-ahead meals or freezing for later.
Ingredients
2 cups cooked shredded chicken
1 1/2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 (10 oz) can red enchilada sauce
1/2 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon cumin
1/4 teaspoon chili powder
6 to 8 flour or corn tortillas
Fresh cilantro for garnish
Diced green onions for topping
Instructions
1. In a large bowl, combine shredded chicken, half of the cheddar and Monterey Jack cheeses, sour cream, garlic powder, cumin, and chili powder. Mix until evenly blended.
2. Warm tortillas in the microwave for 20-30 seconds to make them pliable.
3. Spread a thin layer of enchilada sauce on the bottom of a 9×13 baking dish. Spoon the chicken mixture into each tortilla, roll tightly, and place seam-side down.
4. Pour remaining enchilada sauce over tortillas and sprinkle with remaining cheese.
5. Cover with foil and bake at 375°F (190°C) for 20 minutes.
6. Uncover and bake for an additional 10 minutes until cheese is bubbly and golden.
7. Garnish with cilantro and green onions before serving.
Notes
Rotisserie chicken saves time and adds flavor.
Warming tortillas prevents them from cracking.
Make ahead and refrigerate or freeze before baking.
