Ingredients
1 (30 oz) bag frozen shredded hash browns, thawed
1/2 cup unsalted butter, melted
1 (10.5 oz) can cream of chicken soup
1 cup sour cream
2 cups shredded sharp cheddar cheese
1/2 cup chopped yellow onion
1 teaspoon salt
1/2 teaspoon black pepper
2 cups crushed cornflakes
2 tablespoons butter, melted (for topping)
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. In a large bowl, mix hash browns, melted butter, soup, sour cream, cheese, onion, salt, and pepper.
3. Spread the mixture into the prepared dish evenly.
4. In a separate bowl, toss crushed cornflakes with 2 tablespoons of melted butter.
5. Sprinkle the cornflake topping evenly over the casserole.
6. Bake uncovered for 45–50 minutes until golden and bubbly.
7. Let rest for 5–10 minutes before serving.
Notes
Use freshly shredded potatoes if desired, but remove excess moisture.
For a vegetarian version, sub cream of mushroom soup.
Top with crushed Ritz crackers or potato chips for a twist.
