Ingredients

450g rigatoni pasta

500g boneless chicken breast or thighs, diced

4 garlic cloves, minced

4 tablespoons butter

2 tablespoons olive oil

1 cup heavy cream

1 cup parmesan cheese, grated

1 cup mozzarella cheese, shredded

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat butter and olive oil in a large skillet. Add diced chicken, season with salt, pepper, and Italian seasoning, and sear until golden and cooked through. Remove and set aside.

2. In the same skillet, melt more butter and add minced garlic. Sauté until fragrant without letting it burn.

3. Pour in the heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and smooth.

4. Cook rigatoni in salted boiling water until al dente. Drain and add to the skillet with Alfredo sauce. Toss to coat.

5. Return the cooked chicken to the skillet and stir to combine. Let it warm through for a few minutes.

6. Top with shredded mozzarella, cover until melted. For a golden cheese topping, place under the broiler for 2 minutes.
