Ingredients
1 lb steak (sirloin or ribeye), cubed
12 oz linguine pasta
4 cloves garlic, minced
3 tbsp butter
1 tbsp olive oil
1 cup heavy cream
1 cup grated parmesan cheese
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook linguine until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
2. Pat steak cubes dry and season with salt and pepper. Heat olive oil and 1 tbsp butter in a skillet over medium-high. Sear steak in batches until browned and cooked to desired doneness. Set aside.
3. Lower heat, melt remaining butter in the same skillet. Add garlic and sauté until fragrant, about 30 seconds.
4. Stir in heavy cream and simmer for 2–3 minutes until slightly thickened.
5. Add parmesan and stir until melted. Toss in cooked linguine and reserved pasta water until sauce coats pasta.
6. Return steak to pan and mix gently. Garnish with parsley if desired. Serve hot.
Notes
Let the steak rest after searing to retain juices.
Use freshly grated parmesan for best flavor and melt.
Add a splash of white wine to the sauce for extra depth.
