Ingredients
1 lb ground beef
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 small onion, diced
10.5 oz condensed cream of mushroom soup
1/2 cup sour cream
1/2 cup milk
1/4 tsp paprika
1/2 tsp dried parsley
3 cups frozen diced hash brown potatoes
1 1/2 cups shredded cheddar cheese, divided
1 tbsp butter, melted (optional)
Instructions
1. In a large skillet, cook ground beef with onion, garlic powder, salt, and pepper until browned and onion is soft. Drain fat.
2. In a bowl, whisk together cream of mushroom soup, sour cream, milk, paprika, and parsley.
3. Add frozen potatoes and 1 cup of cheddar cheese to the sauce. Stir to combine. Fold in cooked beef.
4. Spread mixture into a greased 9×13-inch baking dish. Top with remaining 1/2 cup of cheddar and optional melted butter.
5. Bake at 375°F (190°C) for 40–45 minutes until bubbly and golden. Let cool 5–10 minutes before serving.
