Description
A hearty, cheesy casserole featuring tender potatoes, savory ground beef, and a creamy mushroom sauce. Perfect for weeknights, leftovers, or sharing with a crowd.
Ingredients
1 lb ground beef
1 medium yellow onion, chopped
3 cups russet or Yukon gold potatoes, thinly sliced
2 cups shredded cheddar cheese
1 can (10.5 oz) condensed cream of mushroom soup
1/2 cup milk
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper, to taste
Cooking spray or butter, for greasing the baking dish
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a skillet, cook ground beef and onion until browned. Season with salt, pepper, garlic powder, and smoked paprika. Drain excess fat.
3. In a bowl, mix the cream of mushroom soup and milk until smooth.
4. Layer a third of the potatoes in the dish, then half of the beef mixture, a third of the cheese, and a third of the sauce. Repeat. Top with remaining potatoes, sauce, and cheese.
5. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 20–25 minutes until bubbly and golden.
6. Let sit for 10 minutes before serving.
Notes
Use a mandoline to evenly slice potatoes for perfect texture.
Swap cheddar with mozzarella or Monterey Jack for variation.
Add bell peppers, mushrooms, or peas to boost the veggie content.
