Ingredients
12 oz rigatoni pasta
2 boneless skinless chicken breasts
3 garlic cloves, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 tablespoons butter
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Boil a large pot of salted water and cook the rigatoni until al dente. Drain and reserve 1 cup of pasta water.
2. Season chicken with salt and pepper. Heat olive oil in a skillet and sear the chicken on both sides until golden and cooked through. Remove and let rest.
3. In the same skillet, reduce heat and add butter. Sauté the garlic until fragrant, about 30 seconds.
4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan and mozzarella cheese until melted and smooth.
5. Add the cooked pasta to the sauce and toss to coat. Use reserved pasta water to loosen the sauce if needed.
6. Slice the rested chicken and place over the creamy pasta. Garnish with parsley and serve warm.
Notes
Use bronze-cut rigatoni for better sauce absorption.
Gradually add cheese to avoid clumping in the sauce.
Rest the chicken after cooking to keep it juicy.
