Description

This Cheesy Southwest Tortilla Breakfast Casserole is the ultimate make-ahead breakfast or brunch dish—hearty, cheesy, and loaded with Southwest flavors. With sausage, beans, peppers, and melty cheese layered between tortillas, every bite is satisfying and full of flavor.


Ingredients

1 tablespoon olive oil

1/2 pound breakfast sausage

1/2 cup diced red bell pepper

1/2 cup diced green bell pepper

1/2 cup diced onion

1 teaspoon chili powder

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and black pepper to taste

15 ounces black beans, drained and rinsed

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

6 small tortillas, cut into quarters

Optional chopped cilantro

Optional green onions

Optional hot sauce for topping


Instructions

1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it apart.

2. Add diced bell peppers and onion. Cook until soft. Stir in chili powder, cumin, garlic powder, salt, and pepper. Remove from heat.

3. In a bowl, whisk together eggs and milk. Season lightly with salt and pepper.

4. In a greased 9×13-inch baking dish, layer half the tortillas, sausage mix, black beans, and cheeses. Repeat layers.

5. Pour egg mixture evenly over the top.

6. Cover with foil and bake at 350°F (175°C) for 25 minutes.

7. Remove foil and bake an additional 10-15 minutes until golden and set.

8. Let cool 5-10 minutes before slicing and serving. Garnish as desired.

Notes

You can prep it the night before and bake fresh in the morning.

Corn tortillas hold up better, but flour tortillas create a softer texture.

Great for freezing—wrap individual portions and reheat when needed.
