Ingredients
1 lb twisted pasta (rotini or fusilli)
2 boneless, skinless chicken breasts
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
3 garlic cloves, minced
2 tbsp butter
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 tsp Italian seasoning
Instructions
1. Cut chicken into bite-sized chunks. Heat olive oil in a skillet over medium-high and cook chicken until golden brown. Season with salt, pepper, and Italian seasoning. Remove and set aside.
2. Boil salted water and cook pasta until al dente. Drain and reserve 1/2 cup of pasta water.
3. In the same skillet, melt butter and sauté garlic until fragrant. Lower heat and stir in heavy cream. Add Velveeta cubes and stir until melted.
4. Add cooked pasta and chicken to the skillet. Toss to coat evenly in the cheese sauce. Use pasta water if needed to loosen the sauce.
5. Top with shredded mozzarella and let it melt. Broil for 2 minutes if desired for a golden top. Serve hot.
Notes
Use freshly minced garlic for maximum flavor.
Broil the dish briefly for a bubbly, cheesy crust.
Reserve pasta water to control sauce thickness.
