Ingredients

For the crust:

1 ½ cups chocolate cookie crumbs

¼ cup unsalted butter, melted

For the chocolate cheesecake filling:

2 (8-ounce) packages cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

6 ounces semi-sweet chocolate, melted and slightly cooled

For the cherry topping:

1 ½ cups cherry pie filling (store-bought or homemade)

½ teaspoon almond extract (optional)


Instructions

  1. Prepare the Crust: Preheat oven to 325°F (163°C). Mix chocolate cookie crumbs and melted butter, then press into a 9-inch springform pan. Bake for 8-10 minutes and let cool.
  2. Make the Filling: Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla, sour cream, and melted chocolate until fully combined.
  3. Bake the Cheesecake: Pour the filling over the cooled crust. Bake for 45-50 minutes until the center is slightly jiggly. Turn off oven, crack the door, and let it cool inside for an hour.
  4. Add the Cherry Topping: Once fully cooled, spread cherry pie filling over the top. Refrigerate for at least 4 hours or overnight.
