Ingredients
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup granulated sugar (for rolling)
2 teaspoons ground cinnamon (for rolling)
Instructions
1. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (2-3 minutes).
2. Add eggs one at a time, beating well after each addition.
3. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
4. Chill the dough for 30–60 minutes.
5. Mix the 1/4 cup sugar and 2 tsp cinnamon in a small bowl for rolling.
6. Preheat oven to 350°F (175°C). Roll chilled dough into balls and coat in cinnamon sugar.
7. Arrange on a parchment-lined baking sheet, spaced 2 inches apart.
8. Bake for 9–11 minutes, until edges are set and centers look slightly underbaked.
9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Use Saigon or Ceylon cinnamon for richer spice.
Don’t skip chilling the dough—it helps achieve the chewy center.
Store with a slice of bread to keep cookies soft for days.
