These Chewy Hot Cocoa Cookies deliver all the nostalgic warmth of a mug of hot cocoa in cookie form. Fudgy, chocolate-rich, and gooey with melted marshmallow centers, they’re a cozy treat that’s quick to make and hard to resist.
Ingredients
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/3 cup light brown sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
2/3 cup unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 cup semi-sweet chocolate chips
12 large marshmallows, halved
Instructions
1. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
2. Beat in the eggs one at a time, then add the vanilla extract.
3. In another bowl, whisk flour, cocoa powder, salt, and baking soda.
4. Gradually add dry ingredients to wet mixture.
5. Stir in chocolate chips.
6. Cover and chill dough for 30 minutes.
7. Preheat oven to 350°F (175°C).
8. Scoop dough into 2-tablespoon balls on lined baking sheet.
9. Press half a marshmallow into the center of each dough ball.
10. Bake 9–11 minutes, until edges are set and centers are soft.
11. Let cool on sheet for 5 minutes, then transfer to wire rack.
Notes
Use natural unsweetened cocoa powder for classic flavor.
Chill the dough for best cookie shape and texture.
Reheat cookies for 10 seconds in the microwave to revive gooey centers.
