Ingredients

1/2 cup unsalted butter, melted

1 cup light brown sugar, packed

1/2 cup pumpkin puree

1 large egg yolk

2 teaspoons vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/8 teaspoon ground cloves

1/2 cup chopped white chocolate or walnuts (optional)


Instructions

1. Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving an overhang.

2. In a bowl, whisk melted butter and brown sugar until smooth.

3. Add pumpkin puree, egg yolk, and vanilla; whisk to combine.

4. Sprinkle flour, baking soda, baking powder, salt, and spices over wet mix. Gently fold until just combined.

5. Stir in white chocolate or walnuts, if using.

6. Spread the batter in the pan evenly.

7. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs.

8. Cool completely before slicing and serving.

Notes

Use only pumpkin puree, not pumpkin pie filling.

Don’t overmix the batter; just fold until incorporated.
