Instructions
1. In a large bowl, whisk together flour, salt, and sugar. Cut in the cold butter until the mixture is crumbly. In a separate bowl, whisk the egg yolk and milk together, then add to the flour mix. Stir until dough forms, then divide in two and chill for 30 minutes.
2. Toss the sliced apples with sugar, cinnamon, lemon juice, cornstarch, and vanilla extract in a large bowl. Let them sit for about 10 minutes to develop flavor and release juices.
3. Preheat your oven to 375°F. Roll out one half of the chilled dough and press it into a greased 9×13-inch baking dish. Spread the apple filling evenly over the crust. Roll out the second half and lay it gently over the top. Seal the edges and brush with egg white.
4. Bake for 40 to 45 minutes, or until the crust is golden brown and crisp. Cool completely before glazing.
