A retro-style baked chicken dish featuring tender seared cutlets smothered in a creamy mushroom sauce, topped with melty cheese. Perfect for a cozy dinner served over mashed potatoes, rice, or noodles.
Ingredients
3 large boneless skinless chicken breasts, sliced in half lengthwise
0.5 cup all-purpose flour
0.5 teaspoon salt
0.5 teaspoon pepper
3 tablespoons olive oil
2 tablespoons unsalted butter
8 ounces cremini mushrooms, sliced
10.5 ounces cream of mushroom soup (1 can)
0.5 cup sour cream
0.25 cup dry sherry (optional)
1 cup shredded mozzarella or Muenster cheese
Fresh parsley, chopped (for garnish)
Instructions
1. Slice the chicken breasts in half lengthwise to create thin cutlets. Season each piece with salt and pepper, then dredge in flour, shaking off the excess.
2. In a large skillet, heat the olive oil over medium-high heat. Sear the chicken on both sides until golden brown (about 2–3 minutes per side). Remove and set aside.
3. Add butter to the same skillet and toss in the sliced mushrooms. Cook until they release moisture and begin to brown, about 6 minutes.
4. Reduce the heat to low. Stir in the cream of mushroom soup, sour cream, and sherry. Mix until fully combined and smooth.
5. Preheat your oven to 350°F (175°C). Arrange the seared chicken in a 9×13-inch baking dish. Pour the mushroom sauce over the top, then sprinkle with cheese.
6. Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly. Garnish with fresh parsley before serving.
Notes
Use sherry for extra depth, but chicken broth or white wine works in a pinch.
Don’t skip browning the chicken—it adds flavor and seals in moisture.
For extra creaminess, add a few tablespoons of cream cheese to the sauce.
