Ingredients
12 oz wide egg noodles
3 cups cooked shredded chicken
1 cup frozen peas and carrots
1 cup corn kernels
1/2 cup diced onion
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1/2 cup grated parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
1/2 cup crushed Ritz crackers or breadcrumbs
2 tbsp melted butter
Instructions
1. Preheat oven to 350°F and cook noodles until just al dente. Drain and set aside.
2. In a large bowl, mix cream of chicken soup, sour cream, mayonnaise, cheddar cheese, parmesan, garlic powder, onion powder, salt, and pepper.
3. Add cooked noodles, chicken, vegetables, and onion to the creamy base and stir to combine.
4. Transfer mixture to a greased 9×13-inch baking dish and spread evenly.
5. Mix crushed crackers or breadcrumbs with melted butter and sprinkle over the top.
6. Bake uncovered for 25-30 minutes until bubbly and golden. Let rest 5 minutes before serving.
Notes
Use rotisserie chicken to save time and add flavor.
You can substitute Greek yogurt for mayo/sour cream for a lighter version.
