Ingredients

2 chicken breasts

4 garlic cloves, minced

2 tablespoons butter

1 tablespoon olive oil

2 cups chicken broth

1 cup grated Parmesan cheese

1/2 cup heavy cream

2 tablespoons lemon juice

1 cup white rice

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped parsley


Instructions

1. Cut chicken breasts into bite-sized pieces and season with salt and pepper.

2. Heat olive oil and 1 tablespoon butter in a skillet. Sear chicken until golden and cooked through. Remove and set aside.

3. Add remaining butter to the same skillet and sauté garlic until fragrant.

4. Stir in rice, toasting slightly for a minute.

5. Pour in chicken broth, bring to simmer, cover, and cook until rice is tender and liquid is absorbed.

6. Stir in heavy cream and Parmesan until smooth. Add lemon juice and stir to combine.

7. Return chicken to the skillet, warm through, and garnish with chopped parsley.
