Description
This quick and colorful Chicken Zucchini Stir Fry features tender chicken seared with fresh zucchini and a savory, garlic-ginger sauce. It’s light, low-carb, and ready in under 30 minutes—perfect for busy weeknights.
Ingredients
1 lb boneless skinless chicken breasts or thighs, thinly sliced
2 medium zucchinis, sliced into half-moons
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
3 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon oyster sauce (optional but recommended)
1 tablespoon rice vinegar
1 teaspoon sesame oil
Salt and pepper to taste
Optional garnish: sesame seeds, chopped green onions
Instructions
1. Pat your chicken slices dry and season lightly with salt and pepper.
2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add chicken in a single layer and sear 2–3 minutes per side until golden and cooked through. Remove to a plate.
3. In the same skillet, add remaining oil. Add zucchini slices and sauté for 3–4 minutes until just tender.
4. Push zucchini to the side; add garlic and ginger to the center and cook for 30 seconds until fragrant.
5. Return chicken to pan. Add soy sauce, oyster sauce, rice vinegar, and sesame oil. Stir-fry for 1–2 minutes until everything is coated.
6. Remove from heat, garnish with sesame seeds or green onions. Serve hot.
Notes
This dish is best served immediately for best texture.
For extra flavor, marinate the chicken in soy sauce and garlic for 15 minutes.
Zucchini should be sautéed quickly over high heat to avoid sogginess.
