Ingredients
1 pound chicken breasts
1 tablespoon chili powder
1 teaspoon garlic powder
1 tablespoon olive oil
2 cups cooked rice
1 red bell pepper
1 cucumber
1 cup shredded carrots
1/4 cup fresh cilantro
1/2 cup canned coconut milk
2 tablespoons lime juice
1 teaspoon honey
1/4 teaspoon salt
Instructions
1. Rub chicken breasts with chili powder, garlic powder, and a pinch of salt.
2. Heat olive oil in a skillet and sear chicken over medium-high heat until cooked through, 6–7 minutes per side. Let rest and slice.
3. Prepare rice and chop the bell pepper, cucumber, and carrots.
4. In a bowl, whisk together coconut milk, lime juice, honey, and salt until smooth.
