Ingredients
1 1/2 cups chocolate cookie crumbs
1/3 cup unsalted butter, melted
3/4 cup heavy cream
6 oz semi-sweet chocolate bar, finely chopped
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
2 cups whipped cream, divided
1 can cherry pie filling (21 oz)
Instructions
1. Combine crushed chocolate cookies with melted butter until the mixture resembles wet sand. Press into a 9-inch pie dish and refrigerate for 20 minutes.
2. Heat heavy cream in a saucepan until steaming but not boiling. Remove from heat and add chopped chocolate. Let sit for a minute, then stir until smooth and glossy. Cool slightly.
3. Beat cream cheese, powdered sugar, and vanilla extract in a bowl until smooth. Fold in 1 cup of whipped cream.
4. Spread cream cheese mixture evenly over the chilled crust. Pour cooled chocolate ganache on top. Chill for at least 1 hour.
5. Once firm, top with cherry pie filling and decorate with the remaining whipped cream.
Notes
Use finely chopped chocolate bars instead of chips for a smoother ganache.
Allow the ganache to cool slightly before layering to avoid melting the cream cheese base.
